Feed Me: Tex-Mex Quinoa

I have stated in the past my love for Mexican/Tex-Mex food, I attribute my affinity to the time I spent in Texas while in grad school. Well a new food love of my as of late has been quinoa, which I seem to be professing my love to a lot these days…oh well. So last night I had the best of both worlds with this recipe. The best part about this little ditty, is the fact that it is super quick and healthy, which is perfect since my days have been on the long side lately. ENJOY!

Ingredients:

  • 2½ C quinoa
  • 1 (10oz) can black beans, drained and rinsed
  • 1 C grape tomatoes, halved
  • ½ avocado, chopped
  • 1 C fresh cilantro leaves
  • ¼ C fresh lime juice
  • 2 Tbsp olive oil
  • ½ tsp lime zest
  • 1 clove garlic
  • ½ tsp black pepper
  • ¼ tsp sea salt

Instructions:

  1. Cook quinoa according to the instructions on the package
  2. In a blender or food processor add cilantro, fresh lime, olive oil, lime zest, garlic, pepper, and salt.
  3. Pulse until smooth.
  4. Toss all ingredients with quinoa and chill 15 minutes.
