Feed Me: Linguini with Clam Sauce

Today I’m sharing with you another one of my Dad’s famous recipes.  I feel very fortunate to have him as a resource when I am cooking new things.  I have adapted his never measuring and taste as you go attitude, which really works.  Cooking has become super therapeutic for me, and well I just love it.  I love creating dishes where my husband is like “wow this is the best meal ever”.  My life goal is to host amazing dinner parties with lots of delicious food,  good company, and flowing alcohol.  Once we have a little more space I will most certainly be turning that into a reality.

Linguni with Clam Sauce Serves 2

Ingredients:

2 cans chopped clams

linguini or spaghetti

1/2 cup olive oil

1/2 stick of butter

6 cloves of garlic (this is an estimate)

1/2 large diced onion

Few shakes of Worcestershire

Few Shakes of Old Bay Seasoning

Few Shakes of Red Pepper Flakes

Parsley

Parmesan cheese to top

 Directions:

Boil water for pasta-remember to add salt!  Heat olive oil and butter in a large pan.  Sautee onion and garlic until soft.  Add clams and juice cook on medium heat.  Add Worcestershire, old bay, red pepper flakes and simmer for a few minutes.  Add handful of fresh parsley.  Feel free to mix the finished pasta in the clam sauce- once drained of course :).  Serve and top with parmesan cheese, enjoy!
