Feed Me: Baked Zucchini Fries

Eating seasonally is something my husband and I try to do. Luckily, summer brings many options to choose from, like Zucchini, which is one of my FAVORITE vegetables.  We bought a bunch at a road side stand on the way home from the beach, and I have been searching for recipes to use it all up. I came across this recipe for  Baked Zucchini Fries, and let me tell you there were great! Crunchy and savory, but baked….. so still healthy!

Ingredients:

3 Medium Zucchinni’s

2 Eggs

1/2 Cup Panko

1/2 Cup of Parm Cheese-Grated

*All measurements below are approximate. Add additional seasonings as desired.

Teaspoon of Garlic Powder

Teaspoon of Salt

Teaspoon of Pepper

Directions:

Set the over to 425. Cut zucchini in half and into long “fry like” pieces. Mix all dry ingredients together in a bowl. Whisk the two eggs together on a shallow plate plate. Dip the zucchini pieces into the egg and then into the panko mixture. Spread out evenly on a foiled baking sheet.

Bake 10-12 min on each side. I sprinkled some additional cheese while it was baking.

 

Serve with marinara, ranch, or eat by itself!
