Last Sunday night boyfriend sensing my state of stress and hunger (we refer this as hangery) came home and made me the most delicious and healthy meal. So he was able to have me fed in record time while using a few fresh ingredients and love. This is a huge step up since my Sunday meals generally consist of a bacon cheese burger and 5lbs of french fries.
1 box of whole wheat pasta of your choice
2 containers of grape tomatoes (I really like tomatoes so we opted for 2, but you can use however much you want)
fresh mozzarella (Parmesan or feta would also be good alternatives)
red pepper flakes
Prepare the noodles per the directions on the box. While the noodles are cooking half the grape tomatoes.
Take a handful of basil
And chop to a size of your desired preference.
Take about 1/3 of the block of fresh mozzarella and cut into 1 inch cubes
Once the pasta is finished cooking drain and add to bowl with tomatoes and mozzarella.
Add olive oil (which will act as a dressing of sorts) and red pepper flakes to taste.
Add basil and you are done! Nomz.
