Feed Me: Bacon Carbonara

I will apologize ahead of time that this recipe may make you drool, especially if you are a bacon lover. We know that we are…… see previous recipes here and here.

I came across this recipe on my honeymoon in the Dominican Republic. We were in our room showering up to go to our 5th meal of the day (All Inclusives make you eat like a crazy person), and one of the only English speaking channels had a cooking show on. The chef was making Bacon Carbonara and it looked so delicious! So I wrote down the ingredients and played around with the recipe once we got home. Almost a year later and I think I have perfected it. Last night I used angel hair pasta, but pene or linguini work well also. This recipe is a definite crowd pleaser and great to share since it is super filling. Enjoy!

Ingredients: Serves 6

1/2 Package of Bacon (Save the bacon grease)

Few Handfuls on Fresh Spinach

Pasta-Pene or Linguini (half the box or package)

2 Egg Yolks

1 Whole Egg

1/2 Cup of Fresh Parmesan Cheese

Pepper

1Tomato (Optional-they do taste delicious if you add some fresh ones during the summer time)

Directions:

Start boiling water for pasta, cook as directed. Cut bacon into pieces and cook through. Remove bacon to a plate and save the bacon grease in the pan. .

Mix the whole egg and yolks together with the parmesan cheese. Feel free to add more cheese if you like it extra cheesy! Add a few sprinkles of pepper. Add a ladle full of the boiling water from the pasta to the cheese and egg mixture. Mix well.

Add fresh spinach to the bacon greased pan until it wilts down. I usually add a few handfuls because amount dwindles quickly.

Add pasta, bacon, spinach to the egg/cheese mixture. Mix it up well!

Here is where I would add tomatoes if it were summer time. Enjoy!

    I made this the other night and it was absolutely delicious! It was very simple to make…just make sure to use a ladels-worth of boiling water from the noodles to mix into the egg mixture to cook it through. So glad you posted this recipe!!
