Cooking healthy dinners during the week is a tough challenge. By the time I get back from work and go to the gym it is already nine o’clock and the last thing I feel like doing is cooking. I try to plan meals out for the week so that when I return from the gym I don’t eat everything in sight.
This blue fish recipe and stir fried bok choy took me less than 25 min to make! I had time to clean the dishes, put away clothes, and still got to bed at a reasonable hour. This breading would work well on many other types of fish, but it was fabulous on blue fish.
1/2 Cup Panko Bread Crumbs
2 Teaspoons of Chili Powder
1 Teaspoon of Herbs de Provence
1 Tablespoon of Garlic Powder
1 Tablespoon of Creole Seasoning (or Old Bay)
2 Tablespoons of Olive Oil (add once spices are mixed)
Set oven to broil on high.
Mix the seasonings together and add Olive Oil.
Put foil on a baking sheet and add a little Olive Oil so that the fish does not stick. Cover the fish with the crumb mixture and place skin side down. Broil on high for 5 min. Turn oven temp to 400 degrees and cook for another 3-5 mins. Make sure to keep an eye on it so it does not burn. You will know it is ready when you stick a fork in it and pieces flake off easily.

6-8 Bunches of Bok Choy
1 Tablespoon Sesame Oil
2 Tablespoons of veggie oil
Soy Sauce to Taste (2-3 Tablespoons?)
Chop off the bottom of the bok choy, and separate/wash the leaves.
Add a few tablespoons of soy sauce (I did not measure, but make sure not to put too much because it will be too salty). Cook on medium high until the leaves are wilted.
Final Product!! MMMMMM!
