Feed Me: Green Chili Enchiladas

Chicken Enchiladas are one of the most delicious meals on this earth. Recently, I have been trying several different recipes to come up with my favorite. I came across this delectable recipe on Pinterest -because we know how much I love Pinterest…and it was a hit! The green chiles are very mild so if you like spicy I would suggest adding some hot sauce or salsa to the final product. While it is far from the healthiest choice, it is incredibly easy to make and delicious. Everything in moderation, right?

Ingredients:

8-10 Soft Flour Tortillas

2 Cups Monterrey Jack Cheese-divided

2 Cups Shredded Cooked Chicken

3 Tablespoons of butter

3 tablespoons of flour

2 cups of chicken broth

1 cup sour cream

1 4 oz can of diced green chiles-I used 3 🙂

Directions:

Preheat Over 425

Mix the cheese and cooked chicken together and place in each tortilla-I added onions too!

Place the tortillas in a 9X13 in pan

In skillet mel the butter, and stir in flour, cook until bubbly.

Whisk in chicken broth.

Cook over medium heat until it is thick and bubbly.

Add Sour Cream and Green Chiles.

Pour the sauce over the enchiladas and sprinkle with the remaining cheese.

Bake for 20-25min. Watch to make sure the sauce doesn’t boil over.

  What’s not to love about gooey, cheesy, delicious enchiladas!
